Dear Friends,
I am sending out my fall class schedule early this year to
assure you, among other things, that I have not run off to
Paris indefinitely, although I’ll admit it’s tempting. Let me
share with you my plans for Chez Madelaine cooking
classes in Paris this September by offering you an invitation
to join me in a new cooking adventure. So, what is it like to
cook in Paris?

| We will begin on a charming Montmartre street lined with
food shops, six of us, woven baskets in hand. We purchase ingredients
for the day, return to my apartment and prepare a meal
together around my granite covered island. You know you are in
Paris when you walk to and from the market and cook in a compact
and efficient kitchen space. Nonetheless, you will be
amazed at how easily we create a simply, delicious meal. |

Cooking in Paris is extra special because we can actually meet
with the passionate food artisans who provide our ingredients.
We will browse time-honored equipment stores on rue Montmartre
and discuss our discoveries during several memorable
restaurant meals.

I thought food costs were high in Paris until I came home this
month and shopped the local supermarkets. Not a problem. We’re
already ‘up to speed’ when it comes to economizing. I will continue
to teach comfort foods that are easy to prepare and affordable:
fish soups, braised dishes and quick sautés using inexpensive cuts
of meat, just like we will shop and cook in Paris. Our splurge this
season will be a class on chocolate eclairs and profiteroles in which
I will share recipes I learned at Ecole LeNôtre this spring. As alway,
our motto is “Excess in moderation” !
